1 c. vegan margarine
2 tbsp. unsweetened applesauce
1 medium sweet potato
BAKE at 375 degrees Fahrenheit for 10 minutes. You can freeze the dough as little nubbins & cook from frozen. Cool on baking sheets for 2 minutes; remove to wire racks to cool completely.
Made 42 cookies (I think)
For cakier cookies - use less potato & applesauce.
Yumm!!! They came out great! Like I said we may have mis-measured our applesauce so it was ever so slightly runnier than expected. STILL, came out great, they were nice and very soft - even 2 days later!
