What to do with coconut oil?

What's your favorite thing to do with coconut oil?  

We just picked up our first jar of the stuff. I feel like it's been in the natural/health/organic community for ages and we're just now getting around to buying some for ourselves. I've seen it a lot if fancy recipes, vegan stuff and if I do I disregard since we never owned any. I always thought it cost way to much for me to even think about buying. Why would I spend $13 on a jar of something I may only use once? That is the thought of many yet to be cooking enthusiasts in general though.  

I finally decided to take the plunge when I saw it for $6 at Trader Joe's. Gah could that place be anymore awesome!? I swear it gets better and more awesome every time I go. Forget 'whole paycheck' Whole Foods I'd spend my whole paycheck (if I got one) at Trader Joe's these days. Sorry Whole Foods I love you too - you're more a long term goal of being able to spend my whole paycheck there.  


So now... uh what do I do with it? Do I stir it or mix it?  We tried it once when making stir fry just as oil in the pan to cook the veggies.  It melts crazy fast!!  We weren't sure how much to use - is it 1:1 ratio equivalent of olive oil or butter?  Besides heating the pan what should I be doing with it?  Spreading it on toast?  Baking with it?  Eating on top of chocolate (may have tried that - it's like a mounds bar!)?  But really if I wanted a homemade mounds bar I'd just have used straight coconut flakes - not the oil.  Also what's up with the virgin aspect of it?  I've done a little research on it and it has some great health benefits so I want to give it a chance.

  2. Cooking uses are all good, but my mom uses it as moisturizer. She swears by it in our dry Colorado climate!

  3. Ha! I bought cocoanut oil awhile back bc I keep hearing the benefits and now it is still sitting in my cabinet! I talked to an all natural doc who said use it in everything. I have yet to try it! Let me know what good ideas you come up with!!

  4. Did we have popsicles when you guys came over for the 4th of July? The recipe book I use for those has a quick shell recipe that calls for coconut oil. Since it is a solid at room temperature, the quick shell quickly (hence the name) hardens when you poor it over ice cream or frozen popsicles. It's kind of fun to use.
    If you come up with some other good ideas, let me know! I have a HUGE jar of it!

  5. I love that you posted these random coconut oil notes.
    A lot of people use it in place of butter...its vegan
    It is also used in a lot of Indian recipes.
    I am sharing a mounds recipe I came across...which uses the oil as a grease essentially, not really for the flavor!

    use it in place of oil when sauteing..I wouldn't eat it on a spoon though!
