A couple weeks ago we loaded up our Saturday morning routine with some ebelskivers. Typically we whip up something fantastic on Saturday mornings at home. Pancakes, waffles, or omelets but this week we decided to pull out our recently unused ebelskiver pan.
I got this pan as a bridal shower gift and love its cuteness. Ebelskivers are little pancake like puffs that are delicious and highly customiziable. You grill them like pancakes on the stove in the little wells of the pan. Our pan makes 7 at a time. Batter is similar to pancake batter.

I masterfully deyolked an egg. The more fresh and local and organic the egg the easier this is done. Am I right? Great orgainc eggs (like our new CSA box eggs are incredible surdy and the yokes are no joke) are great to bake with.
There is a skill to cook these throughouly - hint it involves a special tool. The chopstick. Yes the chopstick is the secret tool. You sorta flip them while they're cooking but in a circluar fashion. Wish I could have taken a video.
Here is the pan we have. A fun gift for someone who loves something sweet.
We put raisins in the middle of them and powdered sugar on top. They were delicious warm and cinnamon-y.
My parents have one of these. I will have to borrow it to try it out.
