Acorn Squash Bread - Pinterest Challenge

It's that time of year again - the Pinterest Challenge. It's a non official challenge to actually do something off one of your pins hosted by a few fab bloggers - SherryKatieSarah & Carmel. This season I'm doing another food item. To check out my last one see here.

Onward to my bread. We got 2 acorn squash in our last CSA (more on that soon). I wondered if they're small for their size or typical. One squash made just over a cup after roasting and de-seeding. I needed 1 cup for the recipe so I ate the rest w/salt & pepper for a little snack. Yum (but after it's blended it reminds me of baby food) whatevs.

I was home alone so I had to split this thing by myself. I got dear husband to cut the larger spaghetti and butternut squash recently since they was too much for me. Luckily these were small so it only took a few mins.

I went all out with the nuts & dried fruit. All out. I added tons of dried cranberries and broken bits of pecans. The more the merrier!


By the magic of the internet... we have bread! I added a ton of turbinado sugar on top for crunchy goodness.


The final product! YUMMM with a little halloween fun in there too.
