What do we make for dinner in the winter? Something easy, quick and tasty? Soup! Recently I made basic tomato soup.
Add chopped red pepper, chopped onion, chopped carrots, and diced garlic to large pot with a little oil. Simmer for 5-10 minutes. Then add tomatoes and broth. If you’re using canned tomatoes include all the juices from the can. Bring to a boil on high then simmer on low for 30 minutes. Towards the end blend with a stick blender or using a traditional blender in batches if necessary to get that smooth blended consistency.
